Fantastic fast food
Next level paella 🥘
Paella means “frying pan” in Valencian, Valencia’s regional language. As a dish, it may have ancient roots, but in its modern form it is traced back to the mid-19th century, in the rural area around the Albufera lagoon adjacent to the city of Valencia, on theeast coast of Spain.
3 tbsp olive oil
1 small bunch of parsley leaves and stalks separated, leaves roughly chopped
A pinch of curry powder
A pinch of chili powder
100ml dry sherry or white wine and water
500 g mixed frozen seafood
large pinch of saffron strands
150g cooking chorizo
Cut into chunks
1 onion finely chopped
1 capsicum diced
3 garlic cloves, finely
1 can of diced tomatos
250g rice
100g frozen podded broad beans or peas (or a mixture of the two), defrosted
1 lemon finely
zested then cut into wedges
smoked sea salt (optional)
Cut all your vegetables to the size you like.
I prefer small size.
Put all your ingredients in your rice cooker (rice and liquid first followed by herbs and spices then add everything else and cook for one hour!
Now all done!
